Strawberry Filled Cupcake Cones
Wrap the cones in aluminum foil, and place in cupcake pans.
Follow cake mix directions of your choice, and fill the cone ½-1/3 full. We used a strawberry box mix.
Follow the cupcake directions for time and degree, as shown on your mix box, or your ‘from scratch’ recipe.
When finished baking, the cake should have filled the rest of the cone.
Let cool.
With a sharp knife, lower blade into the center of the cone, twist, and pull out so that you have made a long thin opening in the cone.
With the same knife, fill the opening with strawberry preserves.
Use the frosting of your choice, and for added holiday flair, add food coloring to make it pink or red.
Decorate with toppings of choice, and enjoy!
These were such a hit that we made 'sundae' cones the following week, as you see below.
I’ve already bought green food coloring and mint extract to experiment for St. Patrick’s Day!
